High Protein Turkey Veggie Frittata

Preheat oven to 375. Heat 2 tbsp of oil or ghee over medium heat in cast iron skillet. Add veggies, salt, pepper, garlic powder and saute until tender. Remove veggies and add turkey.Add seasoning and cooked until cooked through. Remove ground turkey from skillet.  In a separate bowl mix eggs + egg whites together Spray skillet with cooking spray. Add veggies + turkey + egg mixture + salt + pepper. Use fork to distribute evenly. 

Place in the oven for 15 - 18 minutes. Check the middle with a fork, should come out clean.

Allow to cool for at least 30 mins. Serve with cheese of choice :) (I like Feta or Goat)

Store in air tight container in fridge for up to 6 days

6 whole eggs

1 small carton egg whites (2 cups)

1 medium green bell pepper

1 medium yellow onion

1 small zucchini

1 handful spinach

1 lb ground turkey (93/7)

2 Tbsp of ghee or oil

Sea Salt

Black Pepper

Garlic powder

Avocado oil or cooking spray

12” cast Iron skillet
