honey nut granola

2 cups finely chopped nuts (I use a mixture of cashews, pecans, walnuts and almonds)

2 cups rolled oats

1 cup unsweetened coconut flakes

2 Tbsp chia seeds

1/4 cup ground flaxseed

1 tsp cinnamon

1 tsp sea salt

1/3 cup coconut oil (melted)

1/2 cup natural honey

Preheat oven to 300 degrees. Mix all dry ingredients together (I personally like to finely chop my nuts using a blender or magic bullet but it is not necessary), add wet ingredients and mix thoroughly. Spread evenly on a lined baking pan. Create a middle in the center of the pan to separate mixture into 2 parts. Press mixture evenly down onto pan. Bake for 15 minutes, turn pan and bake for another 15 - 20 minutes. Cool for 30-40 minutes. Break pieces into whatever size granola chunks you like :) Store in airtight container. Does not need to be refrigerated
