Homemade Protein Bars

INGREDIENTS

  • 1.5 cups gluten-free rolled oats, blended into a flour

  • 1/2 cup unsweetened/unflavoured vegan protein powder (I use Sunwarrior Warrior Blend Natural)

  • 1 cup rice crisp cereal

  • 1/3 cup ground flasxeed

  • 1/4-1/2 teaspoon fine grain sea salt, to taste

  • 3/4 cup natural peanut butter, almond butter, or sunflower seed butter

  • 1/2 cup honey (or sweetener of your choice)

  • 1 teaspoon pure vanilla extract

  • 3 tablespoons mini dark chocolate chips 

  • topping

    • 1/2 tablespoon coconut oil

    • 1/2 cup dark chocolate


DIRECTIONS

  • blend oats into oat flour, mix all dry ingredients except chocolate chips together in a bowl

  • melt peanut butter, honey and vanilla together for 30 - 45 seconds in microwave

  • add mixture to dry ingredients, mix thoroughly

  • add in mini chocolate chips, I like to mix with hands to make sure everything is combined

  • press down into parchment lined 8x8 baking tin. Use rolling pin or hands to press down

  • melt dark chocolate and coconut oil together

  • drizzle over bars

  • refrigerate at least 30 minutes

  • cut into any size bar you like :)
