Homemade Protein Bars
INGREDIENTS
1.5 cups gluten-free rolled oats, blended into a flour
1/2 cup unsweetened/unflavoured vegan protein powder (I use Sunwarrior Warrior Blend Natural)
1 cup rice crisp cereal
1/3 cup ground flasxeed
1/4-1/2 teaspoon fine grain sea salt, to taste
3/4 cup natural peanut butter, almond butter, or sunflower seed butter
1/2 cup honey (or sweetener of your choice)
1 teaspoon pure vanilla extract
3 tablespoons mini dark chocolate chips
topping
1/2 tablespoon coconut oil
1/2 cup dark chocolate
DIRECTIONS
blend oats into oat flour, mix all dry ingredients except chocolate chips together in a bowl
melt peanut butter, honey and vanilla together for 30 - 45 seconds in microwave
add mixture to dry ingredients, mix thoroughly
add in mini chocolate chips, I like to mix with hands to make sure everything is combined
press down into parchment lined 8x8 baking tin. Use rolling pin or hands to press down
melt dark chocolate and coconut oil together
drizzle over bars
refrigerate at least 30 minutes
cut into any size bar you like :)
