Spicy Tortilla Turkey Soup


Ingredients

  • 1 lb ground turkey

  • 2 tbsp avocado oil

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 1.5 tsp cumin

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • 1 tsp black pepper

  • 1 tsp sea salt

  • 4 cups chicken broth

  • 1, 14.5 ox can fire-roasted tomatoes

  • 1, 4.5 oz can green chiles

  • 1 bag trader joes frozen Mexican cauliflower rice

  • 1, 14 oz can full-fat coconut milk

  • 1/2 cup cilantro, chopped


Optional Toppings

  • Sliced green onions

  • Fresh cilantro

  • Diced avocado

  • Sour cream or coconut cream

  • Lime wedge

  • Shredded cheese

  • Tortilla strips


  1. Heat a large pot to medium heat and cook ground turkey. Remove ground turkey from pot & add avocado oil

  2. Add onion, cook for about 5 minutes until softened

  3. Add garlic, stir constantly for about 30 seconds, add all spices and cook for another minute

  4. Pour in stock, roasted tomatoes, chiles, riced cauliflower, coconut milk and ground turkey

  5. Bring to a simmer over medium heat

  6. Cook until cauliflower riced is cooked through, stir in chopped cilantro

  7. Serve in a bowl with toppings of choices

  8. Store in airtight container for up to 4 days
