Gut Friendly Veggie Soup

Ingredients:

2 tbsp coconut or avocado oil

1 sweet onion, chopped

3 -4 large carrots, sliced

2 - 3 celery stocks, sliced

1 large sweet potato, cubed

1 medium zucchini, cubed

2 - 3 cloves garlic, minced

Ginger (thumb size chunk(, minced

1 tbsp cumin

1 tbsp coriander

1 tbs turmeric

Salt + pepper to taste

1, 32  oz container miso or veggie broth

1 - 2 cups filtered water

Lemon, juiced

1 - 2 handfuls leafy greens (spinach, kale, etc)

Fresh herbs (cilantro, basil, Parsely)

Add oil to large pot, once melted add onion, carrots, celery & sweet potatoes. Season with salt and pepper, once softened add zucchini, ginger, garlic, cumin, coriander & turmeric. Cook for another 3 - 5 minutes. Add broth + water, bring to a boil. Once boiling, reduce to simmer and cook for another 15 - 20 mins. Add lemon juice, leafy green & fresh herbs. Serve over rice or lentils or enjoy by itself.

Last for 4 - 5 days in fridge
